A charcoal roasted and highly oxidised strip-style oolong. Woody smokiness from roasting is balanced by a light floral character and the brown sugar sweetness on the finish. The infusion is a deep amber colour.

Origin: Wuyi Mountain, Fujian Province
Cultivar: Shui Xian
Harvest & Processing: Harvested late April/early May 2018. Four-five young leaves were picked and partly oxidised, then baked twice over a 3-month period.

Shui Xian is one of the most popular cultivar’s grown in the Wuyi mountains. Wuyi teas are famous for their mineral character, which is usually attributed to the rocky terrain of the area, but may well be due to the strain of bush.    

The tea’s bold and deep flavour make it an excellent partner for a roast or chocolate-rich desserts.

Stored well, good quality Wuyi oolongs such as this can keep and develop for years. In China, many tea producers from the Wuyi Mountains of Fujian claim that their roasted oolongs are at their best one year after harvest and don't present them to market until this time.
