Variety: Camellia sinensis sinensis
This classic white tea is made from one or two leaves and a bud. After picking, the leaves are given a hard wither for several days, in the sun when possible, then dried. And that's it! Hence white tea is also referred to the least processed of all the tea styles.
Brew at 85°C with freshly drawn and filtered water. Use 3-4g (2 heaped teaspoons) per cup and steep for 1-2 minutes before serving, or to taste. Infuse twice or more.
