One of the keys to great matcha is sifting it first. A matcha sifter, or chakoshi, removes any clumps that build up in the matcha due to static electricity, and finely disperses the matcha in the bowl before adding water and whisking. Likewise, no self-respecting master baker would dream of baking a cake with lumpy flour, so make sure you sift your cooking matcha first too!
