Dong Ting Bi Luo ChunGreen Snail Spring
Known as Green Snail Spring, after the curled shape of the dried tea leaves, Bi Luo Chun is one of China's ten famous teas. Infused, the leaves untwist to give a pale yellow liquor, with delicate, gently fruity, floral and nutty flavours.

Traditionally grown among fruit trees in the East and West Dong Ting mountains, the humid conditions of the area are said to help the tea bushes absorb the flavours of spring blossom.
To make Bi Luo Chun, one bud and one leaf are carefully picked, withered, pan fired to kill the enzymes and halt oxidation, shaped and dried; all by hand. Tiny neat spirals covered in fine white hairs are the result, which resemble a snail in silhouette.
Steep 3g of leaves (1tbsp) per cup in 70°C for one minute. Infuse three times, increasing the steep time with each infusion.
